Thanksgiving is the perfect time of year to treat yourself with a delicious Sweet Potato Pie. We've created this homemade recipe to help you indulge inspired by our executive chef. Try it out this holiday season.

Paleo Sweet Potato Pie

PALEO SWEET POTATO PIE

FILLING

  • 4 large sweet potatoes, peeled & boiled until soft
  • 3 eggs
  • 1/3 cup of honey
  • 1/2 tsp nutmeg
  • 3/4 tsp cinnamon
  • 1/2 tsp all spice
  • 1/4 tsp salt
  • 1 tsp. grated lemon zest
  • 1 1/2 cups coconut cream
  • 4 tbsp ghee melted

CRUST

  • 5 cups Otto's Cassava Flour
  • 2 cups lard
  • 1/2-3/4 cups water

INSTRUCTIONS

  1. Crust: Preheat oven to 400 degrees. Mix in food processor until the dough forms, adding water gradually to the mixture. Roll out to 1/8 inch thickness and line a 10" pie pan, fluting the edges.
  2. Pie: Mash sweet potatoes with a potato masher. Combine eggs, honey, spices, salt, rind and coconut cream until well blended. Add to mashed potatoes and mix well to combine. Pour into prepared unbaked pie shell and bake 45-55 minutes or until knife inserted in the center comes out clean. Cool completely before slicing.
